Baby Dal
Ingredients
Makes
- 2 Tbsp coconut oil
- 2 cloves garlic, minced
- 1 Tbsp minced ginger
- ½ teaspoon cumin seeds
- 1 tsp turmeric
- 1 cup lentils
- 4 cups water
- 2 Tbsp tomato paste
Prep
- Soak 1 cup lentils for 1 hour
- Mince 2 cloves garlic
Cooking
- Put a large suacepan over medium heat and heat 2 Tbsp coconut oil
- Add the minced garlic, 1 Tbsp minced ginger, 1 tsp turmeric and ½ tsp cumin seeds. Cook for ~2 minutes stiring frequently.
- Stir in 1 cup lentils until coated in oil
- Add 4 cups water and 2 Tbsp tomato paste
- Bring to a fast simmer, then cook uncovered, stirring occasionally, until lentils are soft. About 25 minutes
