Banana Maple Porridge with Buttered Apples
Ingredients
Makes 2 large bowls
- 2 cups rolled oats
- 3 cups boiling water
- 2 cups milk
- a pinch of salt
- 1 Tbsp brown sugar
- 2 Tbsp maple syrup
- 2 bananas
- buttered apples (see buttered apples recipe)
- extra maple syrup (to serve)
- warm milk (to serve)

Preparation
- Place 2 cups rolled oats and 3 cups boiling water in a medium saucepan and stir to combine. Let oats sit for 10 minutes.
- Finely slice 2 bananas.
- Add the bananas, 2 cups milk, 1 Tbsp brown sugar, 2 Tbsp maple syrup and a pinch of salt to the saucepan and stir.
- Bring slowly to the boil over medium heat. Reduce the heat, to bring the mixture to simmer.
- Cook for 10 minutes, stirring often. The banana should almost dissolve.
- Remove from heat and let the porridge stand, covered, for 2-3 minutes before serving.
- To serve: Top with buttered apples and extra maple syrup, and offer a jug of warm milk on the side. Serves 2.
