Banana Maple Porridge with Buttered Apples

Ingredients

Makes 2 large bowls

  • 2 cups rolled oats
  • 3 cups boiling water
  • 2 cups milk
  • a pinch of salt
  • 1 Tbsp brown sugar
  • 2 Tbsp maple syrup
  • 2 bananas
  • buttered apples (see buttered apples recipe)
  • extra maple syrup (to serve)
  • warm milk (to serve)

Preparation

  1. Place 2 cups rolled oats and 3 cups boiling water in a medium saucepan and stir to combine. Let oats sit for 10 minutes.
  2. Finely slice 2 bananas.
  3. Add the bananas, 2 cups milk, 1 Tbsp brown sugar, 2 Tbsp maple syrup and a pinch of salt to the saucepan and stir.
  4. Bring slowly to the boil over medium heat. Reduce the heat, to bring the mixture to simmer.
  5. Cook for 10 minutes, stirring often. The banana should almost dissolve.
  6. Remove from heat and let the porridge stand, covered, for 2-3 minutes before serving.
  7. To serve: Top with buttered apples and extra maple syrup, and offer a jug of warm milk on the side. Serves 2.
