Banana Whole-wheat Pancakes

- 2 eggs
- 3 bananas
- 1½ cups milk (full fat cow, oat or almond)
- 1 tsp vanilla extract
- 2 cups whole-wheat flour
- 1 tsp baking soda
Preparation
- Separate 2 eggs and set aside the whites
- Mash 3 bananas and mix with the egg yolks, 1½ cups milk and 1 tsp vanilla extract
- Sift in 2 cups whole-wheat flour and 1 tsp baking soda. Mix with a flat spatula to combine.
- Wisk the egg whites until the form stiff peaks. Gently mix into the batter.
- Melt a small amount of butter or other oil in a heated pan. Cook as small (~10cm) pankcakes.
