Banana Whole-wheat Pancakes

  • 2 eggs
  • 3 bananas
  • 1½ cups milk (full fat cow, oat or almond)
  • 1 tsp vanilla extract
  • 2 cups whole-wheat flour
  • 1 tsp baking soda

Preparation

  1. Separate 2 eggs and set aside the whites
  2. Mash 3 bananas and mix with the egg yolks, 1½ cups milk and 1 tsp vanilla extract
  3. Sift in 2 cups whole-wheat flour and 1 tsp baking soda. Mix with a flat spatula to combine.
  4. Wisk the egg whites until the form stiff peaks. Gently mix into the batter.
  5. Melt a small amount of butter or other oil in a heated pan. Cook as small (~10cm) pankcakes.
