Fresh Bircher Muesli with Stone Fruit

Ingredients

Makes

  • 2 cups rolled oats
  • 1 cup (8 fl oz) apple juice
  • 1 cup coarsely grated apple
  • 1/2 cup natural yoghurt
  • juice of 1 lemon
  • 1/2 cup sliced peaches and nectarines
  • 1/4 cup mixed berries
  • 2 tablespoons honey

Preparation

  1. Place oats and apple juice in a bowl and soak for 1 hour, or overnight.
  2. Add grated apple, yoghurt and lemon juice to oat mixture and mix well.
  3. Spoon into serving bowls and top with fruit. Drizzle with honey.
