Blackberry Crumble

Ingredients

Makes

  • 3 cups blackberries
  • 2 tablespoons caster sugar
  • 1 cup plain flour plus 1 tablespoon
  • 1/2 cup firmly-packed brown sugar
  • 1 teaspoon baking powder
  • 3 tablespoons quick-cooking oats
  • 100g unsalted butter, in small pieces
  • Vanilla ice cream

Preparation

  1. Preheat oven to 200°C (400°F).
  2. Place the 3 cups blackberries, 2 Tbsp caster sugar and 1 Tbsp of flour in a bowl and toss well to combine.
  3. Place 1/2 cup brown sugar, 1 tsp baking powder, 3 Tbsp oats and 1 cup flour in a bowl and mix well.
  4. Add 1ppg unsalted butter, and rub in with your fingertips until mixture resembles coarse breadcrumbs.
  5. Divide blackberries into two ovenproof bowls, and top with crumble mixture.
  6. Bake for 20-25 minutes, until golden brown and bubbling.
  7. Serve warm, with ice cream.
