Blackberry Crumble

- 3 cups blackberries
- 2 tablespoons caster sugar
- 1 cup plain flour plus 1 tablespoon
- 1/2 cup firmly-packed brown sugar
- 1 teaspoon baking powder
- 3 tablespoons quick-cooking oats
- 100g unsalted butter, in small pieces
- Vanilla ice cream
Preparation
- Preheat oven to 200°C (400°F).
- Place the 3 cups blackberries, 2 Tbsp caster sugar and 1 Tbsp of flour in a bowl and toss well to combine.
- Place 1/2 cup brown sugar, 1 tsp baking powder, 3 Tbsp oats and 1 cup flour in a bowl and mix well.
- Add 1ppg unsalted butter, and rub in with your fingertips until mixture resembles coarse breadcrumbs.
- Divide blackberries into two ovenproof bowls, and top with crumble mixture.
- Bake for 20-25 minutes, until golden brown and bubbling.
- Serve warm, with ice cream.
