Buttermilk Pancakes

Ingredients

Makes

  • 3 eggs
  • 2 cups buttermilk
  • 60g butter
  • 300g plain flour (~2½ cups)
  • 1 tsp baking soda
  • a pinch of salt
  • extra butter for cooking

Preparation

  1. Melt 60g butter
  2. Separate 3 eggs
  3. While the butter melts, beat the egg yolks well and then whisk in 2 cups buttermilk and then the melted butter
  4. Sift 300g plain flour and 1 tsp baking soda over the wet mixture and fold in. You can store the batter in the fridge overnight at this stage.
  5. When ready to cook, whisk the egg whites to soft peaks and fold into the batter.
