Buttermilk Pancakes

- 3 eggs
- 2 cups buttermilk
- 60g butter
- 300g plain flour (~2½ cups)
- 1 tsp baking soda
- a pinch of salt
- extra butter for cooking
Preparation
- Melt 60g butter
- Separate 3 eggs
- While the butter melts, beat the egg yolks well and then whisk in 2 cups buttermilk and then the melted butter
- Sift 300g plain flour and 1 tsp baking soda over the wet mixture and fold in. You can store the batter in the fridge overnight at this stage.
- When ready to cook, whisk the egg whites to soft peaks and fold into the batter.
