Cappuccino Muffins

- 2 eggs
- 200ml milk
- 225g butter
- 90ml espresso (3 double shots)
- 300g all purpose flour
- 4 tsp baking powder
- ½ tsp salt
- 115g caster sugar (1/2 cup)
- 100g dark chocolate
Preparation
- Pre-heat oven to 200°C (400°F)
- Melt 225g butter
- Roughly chop 100g dark chocolate.
- In a large mixing bowl, lightly beat 2 eggs, and then add 200ml milk, 90ml espresso and the melted butter
- Sift in 300g all purpose flour, 4 tsp baking powder, ½ tsp salt, 115g caster sugar and the dark chocolate.
- Split the mixture into a 12-muffin tray and bake for 20-25 minutes. Test with a skewer
