Cappuccino Muffins

Ingredients

Makes

  • 2 eggs
  • 200ml milk
  • 225g butter
  • 90ml espresso (3 double shots)
  • 300g all purpose flour
  • 4 tsp baking powder
  • ½ tsp salt
  • 115g caster sugar (1/2 cup)
  • 100g dark chocolate

Preparation

  1. Pre-heat oven to 200°C (400°F)
  2. Melt 225g butter
  3. Roughly chop 100g dark chocolate.
  4. In a large mixing bowl, lightly beat 2 eggs, and then add 200ml milk, 90ml espresso and the melted butter
  5. Sift in 300g all purpose flour, 4 tsp baking powder, ½ tsp salt, 115g caster sugar and the dark chocolate.
  6. Split the mixture into a 12-muffin tray and bake for 20-25 minutes. Test with a skewer
