Cherry Tomato Spaghetti

Ingredients

Makes

  • 400g cherry tomatoes
  • 2 cloves garlic
  • 2tsp fennel seeds
  • 300g Spaghetti
  • Parmesan cheese

Preparation

  1. Cut cherry tomatoes in half
  2. Thinly slice garlic
  3. Add fennel seeds to a pestle and mortar with a pinch of salt and smash into a powder
  4. Put a small saucepan over medium heat and add the garlic and a splash of olive oil
  5. As soon as the garlic is golden, tip in the bashed fennel seeds and cherry tomatoes. Season with a little bit of pepper and cover with a lid
  6. Turn the heat down to low, and cook gently for 5 minutes, or until tomatoes are soft and sweet, then take them from heat.
  7. In a large pan mix cherry tomatoes with drained pasta. Stir together, season with a little bit of salt, pepper and a squeeze of lemon juice.
