Cherry Tomato Spaghetti

- 400g cherry tomatoes
- 2 cloves garlic
- 2tsp fennel seeds
- 300g Spaghetti
- Parmesan cheese
Preparation
- Cut cherry tomatoes in half
- Thinly slice garlic
- Add fennel seeds to a pestle and mortar with a pinch of salt and smash into a powder
- Put a small saucepan over medium heat and add the garlic and a splash of olive oil
- As soon as the garlic is golden, tip in the bashed fennel seeds and cherry tomatoes. Season with a little bit of pepper and cover with a lid
- Turn the heat down to low, and cook gently for 5 minutes, or until tomatoes are soft and sweet, then take them from heat.
- In a large pan mix cherry tomatoes with drained pasta. Stir together, season with a little bit of salt, pepper and a squeeze of lemon juice.
