Chocolate Mousse

Ingredients

Makes

  • 450g dark choclate
  • 5 egg whites
  • 4 egg yolk
  • 300ml cream, whipped

Preparation

  1. Melt the chocolate and with 50ml of water in a heat-proof bowl over a saucepan on low heat. Once melted, cool for 5 minutes
  2. Beat egg whites until stiff peaks form
  3. Add and beat egg yolks into the melted chocolate one at a time
  4. Fold whipped cream into the chocolate mixture and then fold in egg whites in two batches
  5. Refrigerate until set
