Coconut and Passionfruit Slice
Ingredients
Makes
- 125g butter
- 1½ cup caster sugar
- 5 egg
- 2 cups plain flour
- ½ tsp baking powder
- 1 tsp vanilla essence
- 1 cup shredded coconut
- 1½ cups cream
- 160ml coconut milk
- juice and zest of 1 lemon
- ½ cup passionfruit pulp
- salt
Pastry
- Beat 125g butter and ½ cup caster sugar in a stand mixer until light and creamy.
- Add 1 egg and 1 tsp vanilla essence and beat well.
- Add 1½ cup plain flour (sifted), ½ tsp baking powder and a pinch of salt, and stir until combined and the mixture forms a sticky dough.
- Flour hands and press pastry evenly into the base of a greased and baking-paper lined 23 x 23 cm (9 x 9 in) tin.
- Bake pastry base in the oven for 15 minutes.
Filling
- Whisk 4 eggs and 1 cup caster sugar in a bowl and whisk until pale.
- Add 1 cup shredded coconut, ⅓ cup plain flour, 1½ cups cream, 160ml coconut milk, the juice and zest of 1 lemon, and ½ cup passionfruit pulp. Stir to combine.
Baking
- Preheat the oven to 180°C / 350°F.
- Pour filling over pastry base in the tin.
- Bake for 35-40 minutes or until golden. Remove from the oven and allow to cool completely in the tin.
- When cool, slice into squares.
