Moroccan Charmoula

Ingredients

Makes

  • 1/2 cup fresh lemon juice
  • 6 cloves garlic, finely minced
  • 2 teaspoons sweet paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1/4 cup chopped fresh cilantro
  • 1 cup extra virgin olive oil
  • sea salt and fresh ground pepper

Preparation

  1. Mix the lemon juice, garlic, paprika, cumin and cayenne in a mixing bowl until smooth
  2. Whisk in the parsley, cilantro and olive oil
  3. Taste and add more oil if necessary, and salt and pepper to taste
