No Sugar Baked Oatmeal
Ingredients
Makes 8 servings
- 1 apple
- 2 eggs
- 3 ripe bananas
- 2 cups rolled oats
- ½ cup of blueberries
- ¼ cup chia seeds
- ¼ cup flax meal
- ¼ cup almond butter
- 1 Tbsp cinnamon
- 1 tsp baking powder
- 2 cups milk (plant-based or cows)
- 1 teaspoon vanilla extract
- cooking oil spray or butter
Preparation
- Preheat the oven to 325°F (163°C).
- Peel, core, and chop 1 apple into 1cm pieces.
- In a medium-sized mixing bowl, lightly beat 2 eggs
- Add 3 ripe bananas to the bowl and mash with a fork.
- Add 2 cups rolled oats, ½ cup of blueberries, ¼ cup chia seeds, ¼ cup flax meal, ¼ cup almond butter, 1 Tbsp cinnamon, 1 tsp baking powder, 2 cups milk and 1 teaspoon vanilla extract. Mix together.
- Grease an 8-inch by 8-inch (20x20 cm) glass baking dish with cooking oil spray or butter.
- Pour mixture into the baking dish.
- Put the dish into the top third of the oven and bake for 45 minutes.
- Serve hot or refrigerate for later.
