No Sugar Baked Oatmeal

Ingredients

Makes 8 servings

  • 1 apple
  • 2 eggs
  • 3 ripe bananas
  • 2 cups rolled oats
  • ½ cup of blueberries
  • ¼ cup chia seeds
  • ¼ cup flax meal
  • ¼ cup almond butter
  • 1 Tbsp cinnamon
  • 1 tsp baking powder
  • 2 cups milk (plant-based or cows)
  • 1 teaspoon vanilla extract
  • cooking oil spray or butter

Preparation

  1. Preheat the oven to 325°F (163°C).
  2. Peel, core, and chop 1 apple into 1cm pieces.
  3. In a medium-sized mixing bowl, lightly beat 2 eggs
  4. Add 3 ripe bananas to the bowl and mash with a fork.
  5. Add 2 cups rolled oats, ½ cup of blueberries, ¼ cup chia seeds, ¼ cup flax meal, ¼ cup almond butter, 1 Tbsp cinnamon, 1 tsp baking powder, 2 cups milk and 1 teaspoon vanilla extract. Mix together.
  6. Grease an 8-inch by 8-inch (20x20 cm) glass baking dish with cooking oil spray or butter.
  7. Pour mixture into the baking dish.
  8. Put the dish into the top third of the oven and bake for 45 minutes.
  9. Serve hot or refrigerate for later.
