Vegetable Quiche

Ingredients

Makes

  • 125g butter
  • 125g cream cheese
  • 1 cup flour
  • 185g gruyere cheese
  • 1 small onion
  • 3 eggs
  • ¾ cup cream
  • ¼ teaspoon nutmeg
  • vegetables (corn, broccili, sundried tomatoes, capsicum, etc.)

Make the pastry

  1. Cream 125g butter and 125g cream cheese together.
  2. Sift in 1 cup flour and blend with a fork.
  3. Wrap in waxed paper and refrigerate for 1 hour.
  4. Roll out to fit 20cm flan tin. Refidgerate while preparing the filling.

Prepare the filling

  1. Preheat the oven to 220°C.
  2. Dice 1 onion.
  3. In a stand mixer, beat 3 eggs, ¾ cup ceam, ¼ teaspoon nutmeg, salt and pepper together on high speed until completely combined, about 1 minute.
  4. Add in 185g grated gruyere cheese, the diced onion and the vegetables.

Cook

  1. Add the filling to the pastry.
  2. Bake in a hot oven for 10 minutes.
  3. Reduce heat to moderately low and cook for a further 30 minutes or until set.
