Vegetable Quiche

- 125g butter
- 125g cream cheese
- 1 cup flour
- 185g gruyere cheese
- 1 small onion
- 3 eggs
- ¾ cup cream
- ¼ teaspoon nutmeg
- vegetables (corn, broccili, sundried tomatoes, capsicum, etc.)
Make the pastry
- Cream 125g butter and 125g cream cheese together.
- Sift in 1 cup flour and blend with a fork.
- Wrap in waxed paper and refrigerate for 1 hour.
- Roll out to fit 20cm flan tin. Refidgerate while preparing the filling.
Prepare the filling
- Preheat the oven to 220°C.
- Dice 1 onion.
- In a stand mixer, beat 3 eggs, ¾ cup ceam, ¼ teaspoon nutmeg, salt and pepper together on high speed until completely combined, about 1 minute.
- Add in 185g grated gruyere cheese, the diced onion and the vegetables.
Cook
- Add the filling to the pastry.
- Bake in a hot oven for 10 minutes.
- Reduce heat to moderately low and cook for a further 30 minutes or until set.
